Dried dried shrimps, also known as dried shrimps, golden hooks, and open ocean. It is a cooked dry product processed from seafood such as white shrimp.

Haimi is a famous seafood product with high nutritional value. According to the determination, every 100 grams of Haimi contains 58.1 grams of protein, 2.1 grams of fat, 4.6 grams of carbohydrates, 577 mg of calcium, 614 mg of phosphorus, 13.1 mg of iron, and Multivitamins etc.

There are two main processing methods of sea rice, namely boiled method and steamed method. Boiled water is a traditional processing method, which has been widely adopted recently. Its processing method is as follows:

1. Raw material processing: Before boiling, it is necessary to classify the raw shrimp by quality and size. For shrimp mixed with sand and its dirt, it needs to be rinsed in clean water to remove small shrimp, small fish and other debris. In order to prevent the shrimp from sticking to the skin, soak the raw shrimp in cold water (preferably ice water) for about 20 minutes before cooking.

2. Boil in water: take clean drinking water to boil, and the weight ratio of water to raw materials is 4:1. Add 5%-6% salt by weight of water. Bring the brine to a boil first, then put the raw shrimp into the pot. Boil the shrimp for about 6 minutes per pot. During the process of cooking shrimp, use a fence along the edge of the pot to continuously stir the shrimp material in the same direction, and remove the floating foam on the water surface. Take the shrimp out of the water, if the shell of the shrimp turns white quickly, it means it is cooked, and it can be taken out immediately. Add the right amount of salt to each pot to maintain the concentration of the brine. After about 5 pots, the brine has become cloudy, and the water needs to be changed in time.

3. Drying: There are two methods of drying dried shrimps: sun-drying or drying. Drain the cooked shrimp into the basket, drain and dry. In case of rainy weather, it should be thinly spread indoors to air dry, and do not stack it to avoid overheating and deterioration of the shrimp feed. When drying, spread the shrimp on a straw mat or bamboo curtain, and turn it over appropriately to make it dry quickly and evenly. If conditions permit, the cooked shrimp can be evenly spread on the drying bamboo curtain after a little cooling, and then pushed into the drying tunnel for drying. The drying tunnel temperature should be kept at 70-75°C for 2-3 hours.

4. Shelling: It can be shelled by sea rice shelling machine, or it can be peeled manually. The sea rice peeled by hand is bright in color, complete in individual and high in yield. A small amount of dried shrimp can be shelled. It is also acceptable to put the shrimp into a sack, and beat the sack on the concrete floor or stone slab with both hands to take off the shrimp shell.

5. Packaging: sieve and classify the shelled sea rice, and classify and package according to the size of the sea rice and its appearance quality. Small plastic bags can be used in quantitative packaging, usually 500 grams per bag, 1000 grams, and finally put into large cartons.

The identification skills of Haimi

The dried sea rice without pigment has a reddish skin, but the flesh inside is yellow-white, while the dried sea rice with added pigment has red skin and flesh. Because the pigment basically has no odor and taste, it can't be felt with the nose or mouth. If the conditions agree, you can soak a few sea rice in water first. If you add ordinary pigment, the water will turn red.

3. Whether it is to preserve light shrimp or salty shrimp, put an appropriate amount of garlic in the bottle to avoid moth-eaten
